Here finally is a NZ recipe.
TAUPO TROUT:
Ingredients:
1 trout cleaned
7 slices of bacon
Stuffing:
1 cup cooked rice
1/2 cup tasty cheese
1 onion
1/2 green pepper (cooked 1 min Slice of bacon (chopped)
in 1 tablespoon butter)
Salt and ground pepper
Method:
Mix all ingredients for stuffing together. Stuff the trout, wrap in bacon slices and season well with ground pepper and put three or four knobs of butter along the top of the trout. Wrap the whole thing in tin foil and seal. Place in a heated oven 200deg. Celsius or 400deg.F
Serve with lemon juice.
This is called 'Taupo Trout' because in New Zealand there is a lake in the central North Island called Lake Taupo. It is the largest lake in the Southern Hemisphere. There have been some very large trout caught in Lake Taupo and it is a very favourite spot for Trout fishermen in New Zealand. At the northern end of the Lake is situated the city of Taupo which is well known for its tourism and at the southern end of the lake you can find a small town name Turangi which is on the main route to either Waiouru and Wellington or you may turn off at Turangi to go to the Chateau which is a famous Hotel where a lot of skiiers and tourists go to stay during the Winter months at the base of Mount Ruapehu.
Mount Ruapehu has been having a lot of volcanic activity over the last 12 months with it erupting quite violently last Winter. The scientists are watching it very closely in case it starts to erupt again.
Because of the eruptions last year it has caused subtle changes to the weather patterns in New Zealand.
COCKLE FRITTERS:
Ingredients:
4 tablespoons Self Raising Flour
1/2 teaspoon salt and pepper
1 cup shelled raw 'cockles' (or shellfish of your choice)
1 egg
milk to mix
Method:
Mix flour, salt and pepper with enough milk to make batter consistency. Add egg and mix well. Mix in raw cockles. Deep fry in hot fat or oil
Enjoy
You can also use the above recipe for anything you want to make fritters with - veges, leftovers, any thing you can think of- so it is ideal for a lunch or supper.
It is also easy to throw together for a barbecue or if you are camping as long as you have a skillet or frypan.
Cockles are a New Zealand Shellfish which are found on the beaches along with Pipis and Tuatuas. When it is low tide it is possible on most sandy beaches to just go out with a bucket and dig down in the sand with your hands and bring them out. It is good fun because sometimes they (the shellfish) will try to dig further down in the sand to get away and you have to be quick.
If you are on holiday at the beach and have the barbecue, then get some shellfish and just chuck them straight onto the 'barbie', in their
shells and when they are cooked the shells will open by themselves.
Eat them straight away and they are really flavoursome.
The 'Maori' word for 'food' is 'Kai'.
